Ingredients:
– 1 lb strawberries, washed and sliced
– 2 packets (8 oz each) cream cheese, softened
– 1 cup powdered sugar
– 2 tsp vanilla extract
– 2 cups heavy whipping cream
– Approximately 14 to 16 whole graham crackers
– Additional sliced strawberries for garnish (optional)
Instructions:
Take a mixing bowl and blend the cream cheese until it has softened. While a hand mixer or stand mixer may be used, beat it until smooth.
Combine the powdered sugar and vanilla extract with the cream cheese, continuing to mix until thoroughly blended and smooth.
In another mixing bowl, whisk heavy cream until stiff peaks form.
Carefully fold whipped cream into cream cheese mixture until well combined and smooth. Do not overmix or whipped cream will deflate.
Lay graham crackers in the bottom of a 9×13-inch baking dish, breaking them if you need to make them fit.
Using a spatula, spread half of the cream cheese mixture evenly on top of graham cracker layer.
Arrange sliced strawberries over cream cheese layer (about half).
Repeat layers: graham crackers, remaining cream cheese mixture, remaining sliced strawberries.
Cover with plastic wrap and refrigerate for at least 4 hours or overnight to set up cake and allow flavors to meld together.
If you want to, garnish the top of the cake with some more sliced strawberries before serving.
Serve the cake in squares and relish the lovely blend of creamy filling, sweet strawberries and soft graham crackers!
This best-chilled Strawberry Cream Cheese Icebox Cake can be stored in refrigerator for 2-3 days.
