Ingredients:
1 package frozen shredded hashbrown potatoes (30 oz), thawed
½ cup unsalted butter, melted
1 can condensed cream of chicken soup (10.5 oz)
1 container sour cream (8 oz)
Cheddar cheese (shredded) – approximately 2 cups divided into two parts
Yellow onion chopped into tiny squares (diced) – half cup
Salt and pepper to taste
– 2 cups of crushed cornflakes or crispy fried onions may be added to spice up its flavor (optional)
Instructions:
Ovens should be preheated to 350°F (175°C).Then, grease a greased 9×13 inch baking dish.
In a large mixing bowl, mix defrosted hashbrown potatoes, melted butter, undiluted cream of chicken soup or equivalent, sour cream, and a cup of shredded cheddar cheese; also add diced onions and bacon/ham if there is any. Add salt and pepper to it as per the taste requirements. Mix well.
In the prepared baking dish, evenly spread out the mixture.
Over the top of the hashbrown mix, sprinkle one more cup of shredded cheddar cheese.
If you want some crunchiness on top of the cheese layer you can sprinkle it with crushed cornflakes or crispy fried onions.
Cover tightly with aluminum foil then bake in for about 45 minutes.
Remove foil and continue baking for another 10-15 minutes until it’s golden brown around edges while cheese is melted and bubbly
Once ready take out from oven let it cool down for few moments before serving.
