Ingredients

1 cup unsalted butter, at room temperature

1/2 cup powdered sugar

1/4 tsp of salt

2 teaspoons vanilla extract

2 tablespoons of cornstarch

2 cups of all-purpose flour

1/2 cup of finely chopped Pecans (I just used Pecan cookie chips so I didn’t have to do any chopping, just poured them in right from the bag)

1 1/2 cups powdered sugar for coating

 

Instructions

Turn the oven on and set the temperature to 350 F (180 C). Grab an electric stand mixer that has a paddle and butter and blend them together in a bowl on medium heat for around 20 seconds. Add in half a cup of powdered sugar along with a pinch of salt. Ensure to mix in the vanilla too.

Add some cornstarch onto the mixture but ensure it doesn’t clump into one spot and in a round motion blend low speed flour with the mixture, and until the flour is completely absorbed. Lastly, ensure the pecans are stirred in as well.

Use a tablespoon to take out some of the dough and roll them into small balls. Place them on a baking sheet that has no grease and layer them inside of the preheated oven for 13-15 minutes. But if the dough is having trouble being evenly spread, chill the balls for an hour and then set them on the baking sheet and bake them. I believe that if the center of a cookie is moistened then all the flavor is lost. This is a more dry type of cookie, but don’t worry, it will melt in your mouth!

 

Once the cookies warm up, roll them in powdered sugar and put them in a bowl. Pour the sugar into the cookies after taking them out from the oven and rolling them in the bowl while the sugar is still warm.

Put the cookies in an airtight container for storage and when the cookies cool, take them out and roll them in powdered sugar again. Gently coat and press them in powdered sugar for a thick covering.
