   1 ½ cups (340g) unsalted butter

   8 oz (225g) cream cheese

   3 cups (600g) granulated sugar

   6 large eggs

   1/2 teaspoon salt

 

Instructions:

Preheat Oven and Prepare Pan: Preheat oven to325°F(165°C).Prepare your pan by applying some oil or margarine on it and then sprinkle some flour so that it sticks well.

Cream Butter and Cream Cheese: In a big bowl for mixing, beat softened butter together with cream cheese until smooth. Use either stand mixer or hand beaters.

To make the batter, first add some sugar to the mixture of butter and cream cheese, stirring it well after every addition until fluffy. Then, one by one, put in the eggs making sure to whisk thoroughly at every step. Add vanilla extract.

Combine flour mixture: in a different bowl sift all purpose flour and salt. Add small amounts of the flour mix into your wet ingredients, stopping when everything is combined together. Be cautious not to overmix as it will make you have a dense cake.

Bake a Cake: The batter should be poured onto a prepared tube or bundt pan then spread evenly. To help release the trapped air bubbles hit the pan gently on the counter top. Preheat an oven to 350 degrees F (175 degrees C) and bake for 60 – 70 minutes or till toothpick inserted into center of cake comes out clean.

Cool down and Serve: After baking, take out your cake from oven and allow it about 10 minutes to cool within pan. Now invert the cake onto a wire rack carefully for complete cooling. Finally cut into slices and serve with whipped cream or fresh berries as suggested above.
