INGREDIENTS
1 cup (200g) granulated sugar
1/4 cup (60g) unsalted butter
1/2 cup (120ml) heavy cream
1/2 teaspoon vanilla extract (optional)
Pinch sea salt (optional, for salted caramel)
DIRECTIONS
In a heavy-bottomed saucepan, heat the granulated sugar over medium-high heat. Stir continuously using a wooden spoon or heat-resistant spatula.
As the sugar melts, it will clump and then turn into a golden liquid. Be cautious as the sugar will be very hot.
Once the sugar has completely melted and turned a deep amber color, add the unsalted butter. Be prepared for some sizzling.
Stir the butter into the caramelized sugar until it’s fully incorporated and the mixture is smooth.
Slowly pour in the heavy cream while stirring constantly. Be careful as the mixture may bubble up vigorously.
