Orange Loaf Cake!!!

Ingredients:

   1 1/2 cups all-purpose flour

   1 cup granulated sugar

   1/2 cup unsalted butter, softened

   2 large eggs

   1/2 cup freshly squeezed orange juice

   Zest of 1 orange

   1 teaspoon baking powder

   1/2 teaspoon baking soda

   1/4 teaspoon salt
   
Optional: powdered sugar for dusting

 

Instructions:

  Preheat the Oven: Heat up your oven to be at least 350°F (175°C). Grease and flour a loaf pan measuring about nine inches by five inches. Alternatively, line it with parchment paper for easy removal later.

Prepare the Batter: In another bowl (medium-sized), put together the flour, baking powder, baking soda, and salt then mix them well. Keep them aside. While on a separate larger bowl beat sugar with softened butter until light or fluffy texture is achieved. One after the other add eggs into this mixture and beat thoroughly after each addition. Finally stir in some grated rind from an orange fruit.
Combine Wet and Dry Ingredients: Add the dry ingredients slowly to wet mixture, alternating with orange juice beginning and ending with flour mixture. Mix until just combined being careful not to over mix.

   Bake the Cake: Pour batter into prepared loaf pan and spread it out evenly. Bake in preheated oven for 45-55 minutes or until toothpick inserted into center comes out clean and top is golden brown.

   Cool and Serve: Let cake cool in pan for about 10 minutes then transfer to wire rack to cool completely. Dust top with powdered sugar if desired after it has cooled. Slice and serve!
