Mini Cinnamon French Toast Bites

 

These sweet and crunchy snack bites feature oyster crackers coated in a buttery brown sugar and maple syrup glaze, flavored with cinnamon and pecans, and baked to a caramelized perfection.

 

Ingredients

  • Oyster crackers – 1 bag (9 oz)
  • Unsalted butter – 1 cup
  • Brown sugar – 1 cup
  • Maple syrup – 1/3 cup
  • Cinnamon – 2 teaspoons
  • Vanilla extract – 1 teaspoon
  • Salt – 3/4 teaspoon
  • Pecans, roughly chopped – 1 cup

 

Instructions

Step 1: Preheat Oven and Prep Crackers
Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper. Place the oyster crackers in a large bowl and set aside.

Step 2: Make Caramel Glaze
In a medium saucepan over medium heat, combine the butter and brown sugar. Stir constantly and bring to a boil, then continue boiling for exactly 2 minutes.

Step 3: Coat Crackers
Remove the saucepan from heat. Stir in the maple syrup, cinnamon, vanilla, and salt. Pour the glaze over the crackers and stir with a rubber spatula until evenly coated. Fold in the pecans, then spread the coated crackers onto the prepared baking sheet.

Step 4: Bake and Cool
Bake for about 12 minutes, until the mixture is bubbly and caramelized. Let the crackers cool completely on the baking sheet, then break into bite-sized pieces.

Step 5: Store
Keep in an airtight container at room temperature.
