Ingredients:
6 pieces of bacon, chopped
1 average onion, diced
2 cans (15 ounces each) beans, drained and washed
1/2 cup ketchup
1/4 cup molasses
2 tbsp brown sugar
1 tbsp mustard (Dijon is preferable)
salt and pepper to taste
Instructions:
Preheat the oven to 350°F (175°C).
In a large frying pan fry bacon bits over medium heat until crispy and browned, for about 5-7 minutes. Remove from the skillet and set aside, keeping drippings in.
Into the same skillet add diced onion and cook until softens and begins to caramelize, about 5 minutes.
In a mixture dish, blend the cooked bacon, sauteed onion, washed out beans, ketchup, molasses, brown sugar, mustard seed, salt and Worcestershire sauce together. Mix everything well.
Transfer bean mixture to baking dish or ovenproof skillet. Spread it evenly.
Place in preheated 375 degree Fahrenheit oven for 45-60 minutes until beans are bubbling and sauce has thickened as desired.
When finished baking remove from oven and let cool a few minutes before serving.
Delicious as a side at your next BBQ or served as a hearty main course with cornbread or rice!
