For the Peanut Butter Filling:
1½ cups creamy peanut butter
½ cup unsalted butter, softened
2½ cups powdered sugar
1 tsp vanilla extract
Pinch of salt
For Assembly & Coating:
24 graham cracker squares
2 cups semi-sweet chocolate chips
1 tbsp coconut oil or shortening (optional)
Instructions
Instructions:
Line a tray with parchment paper.
Beat peanut butter and butter until smooth.
Mix in powdered sugar, vanilla, and salt until thick.
Press 1½ tbsp filling between two graham crackers.
Repeat and place sandwiches on tray.
Melt chocolate with coconut oil until smooth.
Dip each sandwich halfway into chocolate.
Chill for 30 minutes or until chocolate sets.
Notes
Freeze sandwiches before dipping for easier handling.
Store in fridge for best texture.
